Mother’s
Day Dessert: Sweet chocolate mousse!
Mother’s
day is fast approaching- Sunday 10th March- so why not treat your
mum to that something special to eat she deserves. Every mum loves chocolate so
why not try out this quick and easy tasty chocolate mousse…
Ingredients (serves 4)

170g/6oz
good-quality dark chocolate,
minimum 60 per cent cocoa solids

7
free-range egg whites
·
¼ tsp lemon juice
·
40g/1½oz caster sugar
Let’s get started!
1.
Begin
to melt your chocolate- easiest way is break each chunk of chocolate up into a
heat proof bowl, simmering over a pan of boiling water. (Ensure the bowl does
not touch the bottom of the pan and continue to mix the chocolate as it melts
to ensure it doesn’t burn!)
2.
Whisk
the egg whites and lemon juice into a large mixing bowl until soft peaks form
3.
Add
the sugar into the mixing bowl and continue to whisk to ensure air travels
through the mixture until firm peaks form (just like the snowy peaks of the
Scottish mountains!). Do not whisk beyond this point
4.
When
the chocolate has melted remove the bowl carefully from the pan (beware this
bowl may be hot!). Quickly and intensely whisk 1/3 of the egg whites
into the hot chocolate until thick and combined.
5.
Fold
the remaining egg whites into the chocolate mixture until all the egg whites
have been combined into the mixture. Do not over mix at this point or the
denseness of the mixture may disappear.
6.
Spoon
the mixture into 4 dessert glasses
7.
Chill
in the fridge for 2-3 hours
8.
Serve
and enjoy!
